Jason Searle – Winemaker at Save Our Souls
Jason Searle, co-founder and joint winemaker at Save Our Souls, began his journey in the revered vineyards of Bass Phillip. It was there that he met William Downie, renowned for his mastery of Pinot Noir Worldwide.
Over shared meals and hard work, the two bonded and began discussing their dreams of working together and creating collaborative projects in the future.
After working at Bass Phillip, William ventured to Burgundy, deepening his expertise in the famed region. Meanwhile, Jason traveled to Italy’s Emilia Romagna. After nearly a decade apart, the two old friends reconnected in the streets of Melbourne and decided it was finally time to make their shared vision a reality. Thus, in 2008, Save Our Souls was born.
Their first release—a crisp, savory Rosé—captured the essence of Australian summers and set the tone for the lineup that followed: wines that are approachable, expressive, and made with minimal intervention. Jason and William expanded the collection to include a textured Chardonnay, an affordable yet true-to-form Pinot Noir, a versatile Sangiovese, and a playful, juicy Sagrantino.
Jason’s philosophy remains rooted in minimal intervention and a strong connection to the land. He collaborates with passionate growers across Victoria, from the Mornington Peninsula to the Yarra Valley and Heathcote, to create wines that speak authentically of their origins. Save Our Souls wines are designed to be inclusive and enjoyed in everyday moments—whether at a dinner party, a picnic, or a casual weekday meal.
With a spirit of fun and a commitment to evolution, Jason and William continue their journey, proving that while great wine might not change the world, it can bring people together, one glass at a time.

ジェイソン・サールは、Save Our Souls の共同設立者であり、ワインメーカーとしてのキャリアを世界的に有名なピノ・ノワール生産者であるバス・フィリップのブドウ畑でスタートさせました。そこで出会ったのが、ピノ・ノワールで名を馳せるウィリアム・ダウニーでした。二人は、共に食事をし、働く中で友情を深め、いつか一緒に汗をかきながら協力して作品を生み出すという夢を語り合うようになりました。
バス・フィリップでの修行を終えた後、ウィリアムはブルゴーニュに渡り、著名なワイン産地でさらに経験を積みました。一方、ジェイソンはイタリアのピエモンテへ向かい、ファッションと農業への情熱を追求しました。約10年の別離を経て、二人はメルボルンの街角で再会し、かつての夢を実現する時が来たと感じました。こうして2008年にSave Our Souls が誕生したのです。
最初のリリースは、オーストラリアの夏にぴったりな爽やかで旨味のあるロゼで、その後のラインナップの基礎を築きました。続くワインは、親しみやすく表情豊かで、最低限の介入で作られたものばかりです。ジェイソンとウィリアムは、テクスチャ豊かなシャルドネ、手頃で本格的なピノ・ノワール、さまざまな場面に合うサンジョヴェーゼ、遊び心あふれるジューシーなサグランティーノなど、コレクションを拡大してきました。
