Cooking class: Mexican chocolate with Mercedes Ahumada

​DId you know that chocolate comes from Mexico? Even the word ("xocolatl") comes from the Aztec language, Nahuatl.

This workshop won't just be educational ... it will be delicious! We will rediscover the ancestral art of preparing chocolate by hand using the metate, a traditional Mesoamerican grinding stone.

​Led by Mercedes Ahumada, chef-owner of Paris' Chicahualco restaurant, we will explore the origins of cacao, its cultural and symbolic significance, and learn how to transform cacao beans into a rich, flavorful drink.
